Let’s be honest – the last place I want to be in the summer is in the kitchen! Here are a few easy summer meals to keep you fed, happy, and out of the kitchen!
One of my most favorite things about summer is the relaxed, laid back attitude everything seems to take on. Wanna watch TV until 11? Okay. Wanna stay at the pool an extra hour? Fine by me. Wanna just eat cereal for dinner again? Be my guest. Life is just somehow slower (even though I feel like I’m the busiest I’ve EVER been right now).
When we do get tired of cereal for the nth night in a row (it does eventaully happen…) I’ve been pinning some easy summer recipes to try out! I want something that is quick to make, doesn’t require a super hot oven (we have a gas stove and oven, so it heats up our house super fast when we turn it on), and is refreshing, not heavy!

Don’t these all look DELICIOUS? Confession: I wrote this post on a rainy Wednesday morning and by the time I was done, my stomach was growling so loud… people around me could hear it I swear!
I’d like to also add that there is absolutely NOTHIN’ wrong with plain ol’ ham and cheese sandwiches, hot dogs, frozen, warmed up hamburgers, or a $5 little Caesars pizza. I know those days where you don’t even have the energy or strength left at the end of a busy summer day to lift a finger to make even the simplest of meals!
