DING DING! That’s not the school bell, that is the dinner bell. Does anyone else think that those couple of hours between school letting out and dinner being on the table are a preview of what Hell might be like? Grumpy, tired, hungry kids + grumpy, tired, hungry parents = the perfect combination for a drive through dinner, am I right?
BUT WAIT – What if I told you that you can have dinner on the table in less than 20 minutes today, with ingredients you probably already have in your house? I know that sounds too good to be true, but when I’m in a dinner rut I always check out Eat at Home (yep, my favorite meal planning website) for some fresh inspiration!
Easy 15 Minute Dinners for Back to School
So far, we haven’t found a recipe from Eat at Home that we don’t like! I love that she includes a 15-minute meal in each week for those nights where everyone needs to be in a different place (soccer practice, swim club, piano lessons, and karate… sound familiar?) and you’d like to just have a nice family meal.
Here are five super easy, delicious, family-friendly dinners you can have on the table in 20 minutes or less!
Crispy Black Bean Tacos with Feta & Lime Slaw
Okay seriously, just reading that name is making my mouth water! This is an awesome vegetarian/meatless option that is not only budget friendly but so easy to throw together! Just add some Spanish rice and chips & salsa and you’re good to go!
Creamy Chicken Florentine Quesadillas
We had these for dinner this week and O M GOODNESS they rocked our world! Even Jett loved them, which is HIGH praise from a picky eater! These are so creamy and delicious and I love that there some green veggies mixed in! Pair it with a nice salad and maybe some roasted carrots to round it out!
Skillet Chicken Jambalaya
If you’re looking for a spicy kick at dinner, this is your new BFF! I love that you can easily sub out shrimp, sausage, or even crawfish and mix this one up a few times in one month! I love to add a little extra cajun seasoning because I’m a glutton for punishment. Ha! We pair it with salad and some garlic bread!
Now, if you know me, you know that I don’t like seafood. BUT I would make this for Chris and Jett and just have leftovers for dinner! The flavor combo sounds delicious and salmon is so good for you! Again – roast up some veggies (I’m thinking brussel sprouts) and bake off some dinner rolls to bring this full circle!
If you have a picky eater like me, I love to introduce new ways to try fruits and veggies! Adding a thin slice of apple to a grilled ham sandwich is something fun and I think Jett would go for it! The recipe calls for chutney, which is another way to introduce a new fruit as well! We would likely eat this with roasted sweet potato fries.
I used to think that dinner always had to be this big, grand event. But as Jett has gotten older and I’ve gotten better in the kitchen, I’ve found that simple meals are always the way to go for our family. I can’t wait to incorporate a few of these into our regular rotation!
