4th of July is in THREE DAYS! Let’s talk about my favorite dessert: the best fruit pizza – it make the perfect 4th of July dessert! Great for a crowd, packed with yummy fruit, and just a touch of creamy goodness with the cream cheese icing! Seriously – it will be your new favorite thing!
I love 4th of July! Usually, we are at a family reunion in Austin on the 4th of July weekend, but I think it goes without saying that everything has been cancelled and therefor, no reunion this year. But that doesn’t mean we still can’t have my favorite dessert of ALL time for the summer: fruit pizza!
If fruit is not really your thing (or your kid’s thing) this might actually be a realistic way to get them to try something new. We got Jett to try kiwi with this one (spoiler alert: he hated it, but hey he tried it!) so i’m going to make another one this year and see if we can work him up to a raspberry. Solid parenting.
The Best Fruit Pizza
Between the crispy sugar cookie crust, sweet and creamy icing, and fresh fruit, you literally cannot go wrong with this! Customize it to your heart’s content and make it your favorite fruit. You can also warm up some strawberry jelly for an artistic drizzle or add a little honey to the top for another layer of flavor. The possibilities are literally endless with this one!
I’ve provided the basic recipe and method below, including my secret to the best tasting icing, but feel free to go crazy with it! If you make it I would love it if you shared a photo on social media and tagged me so I can see!
Ingredients
- 1 tube of prepared sugar cookie dough (room temperature)
- 8 ounces cream cheese (room temperature)
- 1 cup powdered sugar
- 1 tsp almond extract
- Various fruit (strawberries, blueberries, kiwi, banana slices, peaches, etc)
- On a greased round pizza pan, press out the cookie dough until it covers the entire pan. Bake according to directions on package until it is slightly golden. You don't want to overbake it and make it crispy because it will break as you are adding the icing.
- Combine the cream cheese, powdered sugar, and almond extract. Once the sugar cookie has baked and cooled completely, cover it in icing.
- Slice the fruit as desired and artfully arrange on pizza. Serve immediately OR store in fridge for 1-2 hours before serving.
- Optional: Drizzle with warmed strawberry jelly or honey before serving.
